We currently use Xcode 12.4 to build JavaFX on macOS. We should upgrade to Xcode 14.3.

This will require building on macOS 13 (Ventura) or later. The JavaFX binaries built on 13 will still be able to run on earlier versions (e.g., macOS 11 Big Sur).
